Don´t you just love Sundays? You wake up late in the morning while a fresh breeze gently moves the curtains on your windows, you can hear the birds chirping outside and you know you can close your eyes for a couple of minutes more because it is Sunday morning and you don´t have to hurry anywhere. You can afford to stay in bed as long as you want or until your hungry stomach doesn´t let you know that it is time to eat.
I start my work days at 5 am so I genuinely cherish Sundays and all the time that I get to spend over the preparation of my breakfast (or brunch). It is the only day when I don´t eat oatmeal or toast so I make sure I prepare something extraordinary for my taste buds.
Pancakes are such a wonderful meal for a Sunday morning. They are incredibly yummy, easy to make and light on the stomach. And you can put anything you like on them – they are highly customizable 🙂 You can also have a smaller or larger number of them depending on whether you wish to have a healthy breakfast or a filling brunch.
This time, I put a thin layer of peanut butter on top and covered it with fresh strawberries from our garden. It is such a nice feeling when you can use produce from your own garden when cooking. Just the simple fact that I saw the strawberries grow from little plants into full and red berries makes it seem like I can actually taste the Sun from them on my lips.
1 cup whole wheat flour
1 cup plant-based milk (I used vanilla soy)
2 tablespoons baking powder
1 tablespoon vegetable oil
- Combine all the dry ingredients in a larger bowl.
- Add the oil and milk and stir until you reach a smooth batter.
- Pour a part of the batter on a non-sticking pan and cook over medium-high heat.
- When bubbles start to appear, flip the pancake.
- Serve with whatever your heart is craving for!
I am too lazy to cook something more deliberate on Sundays so this recipe is perfect for me because it takes a tiny amount of time but brings such a tremendous joy to my soul 🙂
